My Recipe for a Scrummy Spanish omelette.

First I peel two large potatoes, cut them really small and make them like little cubes, then I cut and peel an onion and chopped that into small chunks or you can cut them up into rings.

Spanish Potato and Onion Omelette
Then I get a large frying pan and heat up two tablespoons of oil and throw the potatoes and onion in and stir them round till they are going slightly brown......
Then I crack 4-6 large eggs in a bowl and whisk them and then I add a dash of milk too.
I then pour it Into the pan on top of the Potatoes and onion - stirring well till it starts to thicken,
Once one side is done I use another large pan to put on top and then flip it over so the Omelette gets cooked on the other side, You could turn it over with a spatula but sometimes it breaks up.
I then grate a big pile of cheese, say a sandwich plate size and sprinkle it on the top and I squeeze some tomato sauce on too. I them fold it in half using the spatula, let it cook for a few minutes more - then I pop it on my plate and eat it all up - Yummy!
So You Need
2 Large Potatoes,
1 Onion,
2 Tablespoons of Oil
4-6 Eggs ( depending on how hungry you are!)
Dash of milk - no more than 4 fl oz
Grated Cheese
Squeeze / dollop Tomato Sauce.
