Spanish style scrambled eggs. Delicious, easy to make and sets you up for the day!
Boil a medium sized baked potato and when it is soft allow it for to cool for 10 minutes. At the same time whisk 4 eggs together and add 2 table spoons of milk.
Chop up a large tomato and 3 or 4 spring onions.
Add a small amount of olive oil to a frying pan and gently fry the tomato and spring onions. You can also add a chopped up red pepper of mushrooms if you feel like it.
Dice the potato and add to the pan and pour in the egg mixture. Put the frying pan onto low heat and cover with a lid.
Allow the egg to cook slowly and when it is dry on the surface (periodically check) remove from the stove and serve.
